Oven Fried Chicken
Ingredients:
1 cup breadcrumbs
1/4 cup Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon minced fresh thyme
1/2 teaspoon minced fresh oregano
1 teaspoon minced fresh basil
2 teaspoons paprika
salt, to taste
freshly ground black pepper, to taste
2 eggs
2 egg whites
1 teaspoon hot pepper sauce
1 1/2 pounds boneless skinless chicken breasts, halved
3 tablespoons olive oil
Cooking Instructions:
Preheat oven to 350̊
In a plastic bag, combine the breadcrumbs, Parmesan cheese, and spices. In a bowl, beat the eggs and the egg whites and add the hot pepper sauce.
Dip the chicken breasts into the beaten eggs then coat the chicken breasts in the breadcrumb mixture. Spread the chicken breasts out onto a cookie sheet and drizzle with olive oil.
Take the chicken for 30 to 35 minutes.
6 servings of 3 to 4 ounces.

Rosemary Chicken
Ingredients:
1/4 cup flour
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound boneless skinless chicken breast, cut into pieces
2 tablespoons vegetable oil
1/2 cup water
1/2 cup white wine
1/4 cup baby pearl onions or chopped onion
2 tablespoons fresh rosemary or 1 tablespoon dried rosemary
Cooking Instructions:
Put the flour, salt, and pepper into a paper bag. Place the chicken pieces into the bag and shake bag to coat.
Heat the vegetable oil in a skillet and brown the chicken pieces. When the chicken pieces are evenly browned add the water, wine, onion, and rosemary. Let it simmer for about 30 minutes then uncover and cook a few more minutes.
4 servings of about 3 to 4 ounces.

Spicy Chicken Drumsticks
Ingredients:
1/4 cup plain low-fat yogurt
2 tablespoons hot pepper sauce
4 chicken drumsticks, skinned
1/4 cup breadcrumbs
Cooking Instructions:
In a shallow dish, combine yogurt and hot pepper sauce and mix well. Add drumsticks, completely coating them. Cover and marinate in the refrigerator for two to four hours.
After the drumsticks have marinated, dredge them in the breadcrumbs and place them in a baking dish. Bake at 350̊ for 40 to 50 minutes.

Chicken Nuggets
Ingredients:
5 boneless skinless chicken breast halves
1 packet Shake "n" Bake
Cooking Instructions:
Cut chicken into 1 1/2 to 2 inch pieces. Place the chicken pieces and the coating mixture into a bag and shake to completely coat the chicken pieces. Bake at 400̊ for 10 to 15 minutes or until cooked thoroughly.

Chicken Cordon Bleu
Ingredients:
6 boneless skinless chicken breast halves
1 tablespoon Dijon style mustard
3 slices lean ham (1 ounce each), cut into halves
3 slices reduced fat Swiss cheese (1 ounce each), cut into halves
1/4 cup unseasoned dry breadcrumbs
2 tablespoons minced fresh parsley
3 cups of hot cooked rice
Nonstick cooking spray
Cooking Instructions:
Three heat oven to 350̊
Pound chicken breasts to a 1/4 inch thickness. Brush mustard on one side of each chicken breast. Layer one slice each of ham and cheese over the mustard. Roll up each chicken breast from the short end and secure with wooden toothpicks. Spray the tops of the chicken rolls with cooking spray then sprinkle with breadcrumbs.
Arrange the rolled up chicken breasts on an 11 x 7 inch baking pan. Cover and bake for 10 minutes. Uncover and bake for about 20 more minutes.
Stir parsley into the rice and serve with chicken.
